SALAD
Salad with cinnamon-yogurt dressing
Ingredients
150 GMS cauliflower, cut into pieces
75 GMS French beans, cut into pieces
75 GMS baby corn
Salt according to taste
125 GMS carrot
125 GMS cucumber
120 GMS sliced tomatoes
100 GMS sliced mushrooms
5 black olives
5 green olives
50 GMS cottage cheese
25 GMS croutons
2 oranges, peeled and cleaned
1 orange juice
2 tbsp. lemon juice
1 tbsp. olive oil
50 GMS. walnuts, sliced
Whisk for the salad dressing:
Yogurt
3 tbsp. Honey
1/2 tsp. cinnamon powder
Method
1.Parboil cauliflower, French beans and baby corn with salt to taste till tender, yet crisp to
the bite
2.Dice the remaining salad ingredients.
3.In a large mixing bowl, combine all the salad ingredients and drizzle juice of one orange,
lemon juice, olive oil and salt to taste.
4.Just before serving combine half of the salad dressing with the salad ingredients and
toss till well coated
5.Reserve the remaining salad dressing for garnishing.
6.Pour the sauce over the salad with sliced walnuts and orange segments. Serve cold

Sprout Salad
Bean Sprouts And Radish Salad
Ingredients
2 cups bean sprouts (washed and drained)
1 capsicum, cut into strips
4 red radishes, sliced
3/4 cup sliced spring onions
For seasoning:
2 tsp. vinegar
2 tbsp. olive oil or salad oil
2 tsp. lemon juice
1 clove garlic, crushed
1/2 tsp. Soya sauce
1/2 tsp. sugar
Salt and pepper according to taste
For the garnish:
1/2 teacup black olives or stuffed olives
1 tomato, cored and sliced into rings
Method
1.For the dressing shake the ingredients thoroughly in a closed bottle.
2.Mix the bean sprouts, capsicum, radishes and spring onions in a bowl. Put in
Refrigerator
3.Just before serving, pour the dressing over the salad and toss.
4.Serve cold, garnished with tomato rings on the top.

Mixed Vegetable Salad
Vinegary salad laced with mustard,coriander and green chilies.
Ingredients
1/2 cup chopped onion
1/2 cup chopped tomato
1/2 cup chopped cucumber
1/2 cup chopped carrots
1/2 cup chopped lettuce
1/2 cup chopped cabbage
1/2 cup chopped radish
2 tbsp. chopped coriander leaves
5 green chilies
1 cup vinegar
Salt according to taste
For seasoning:
1 tbsp. lemon juice
1/2 tsp. sugar
1 tsp. mustard seeds
1 tsp. curry leaves
1 tbsp. oil
Salt according to taste
Method
1.Mix together all the vegetables.
2.Make a coarse paste of the coriander leaves and green chilies.
3.Mix it with the vegetables. Add salt to it.
4.Prepare the seasoning and add to the vegetables.
5.Add vinegar just before serving and mix together.
